Downtown Neenah, since 2015
A wood-fired oven in the middle of downtown Neenah.
Broken Tree Pizza opened in May 2015 in the Marketplace building at 124 W Wisconsin Avenue, Suite 170. The dough is homemade and hand-stretched, and it bakes on the stone floor of a real wood-burning oven with a live fire in it. That fire is where the char on the crust comes from.
It is family owned, and it is an Italian-inspired, American-style Neapolitan pizza, not a pan pizza and not a chain recipe.

In the oven
A live fire, not a dial.
The oven at Broken Tree Pizza is wood burning, not gas. A real fire burns on the stone floor, and it is what gives the crust its char and the pizza its smoke. The shop's own pizza peel is engraved “Broken Tree Pizza, Est. 2015,” and it gets held up to that same fire every time somebody wants to see the oven for themselves.
Every pizza is twelve inches, hand stretched, and cooked hot enough that it only needs a few minutes on the stone before it comes back out.
What goes on it
Dough made here, stretched by hand.
Nothing arrives frozen. The dough is homemade and hand stretched, which is why no two crusts come out quite the same shape. It gets its sauce first, because the sauce is how the whole menu is organized. Twenty-five specialty pizzas are grouped under five sauces, red, white, creamy garlic, bbq, and pesto, and the customize-your-own option adds a sixth, green chili oil.
Beer comes from local Wisconsin breweries, poured alongside whatever comes out of the oven that night.
Coming in, or taking it home
Lunch, dinner, and a kids menu.
Broken Tree Pizza serves lunch and dinner, dine in or carry out. Children are welcome, and there is a kids menu for the ones who would rather have mac and cheese than a wood-fired pizza. Payment is accepted by American Express, cash, check, Discover, MasterCard, Visa, or a phone tapped for mobile pay.
There is a second Broken Tree Pizza in Appleton, but this one, in downtown Neenah's Marketplace building, is the original.
Frozen Tree, a separate ice cream shop, is down the hall in the same Marketplace building. It is not part of Broken Tree Pizza, but it is a good reason to keep walking after dinner.

Come see the oven for yourself.
